Macaroni and cheese, the classic 1950s comfort food, has made a big comeback at restaurants around the country. Once found mostly in diners, “Mac and cheese” has made its way into fine dining establishments and is now even popularly paired with (of all things!) lobster. Though we use vegetables instead of lobster in our GERD-friendly version, you can certainly have some steamed lobster on the side! This recipe uses whole wheat macaroni mixed with chopped cauliflower (or celery), egg whites, and delicious low-fat sharp cheddar cheese. Perfect as a main course or side dish, it takes just minutes to prepare. Then place it in the oven and cook until light golden brown and bubbly! Enjoy!
