What’s better than spending a Sunday afternoon surrounded by the wonderful aromas of your kitchen, or better yet spending a nice day out, and coming home with dinner ready to serve? This recipe is a cinch to make in your slow cooker and it’s a twist on the classic “Chicken Marbella” dish that calls for lots of garlic. The chicken pieces are cooked with brown sugar, prunes, capers and olives, which might sound like an odd combination, but it makes a lovely complexity of flavors. The liquid base is spiced up with GERD diet friendly herbs, and is delicious when poured over some healthy rice. If you are put off by prunes, keep in mind that they are healthy dried plum fruits, but you can easily substitute them with dried apricots. This is a dinner that’s hard to beat and perfect for a family Sunday.
