I love cooking fresh vegetables to accompany a variety of main courses, and this quick and easy dish is one of my favorites. It’s adapted from a friend’s “tried and true” old family recipe that comes straight from Sicily. The original version calls for lemon instead of rice wine vinegar. The vinegar is a nice replacement – but if your GERD diet can tolerate a dash of lemon, go for it! And be sure to always choose the freshest available veggies for good health! As they say in Italy, Buon Appetito!
