Gingersnaps, cabbage, and caraway seeds give this stew a delightful flavor. We slow cook this dish with “eye of the round” which is an extra lean cut of meat. The United States Department of Agriculture defines an “extra lean cut of meat” based on a 3.5 ounce portion that contains less than 10 grams of total fat. Bottom round roast steak, sirloin tip side steak, top sirloin steak, and bottom round roast steak are also in the “extra lean” category. Keep in mind that by choosing one of these cuts, we reduced the fat content in this GERD diet friendly recipe by about half. And when in doubt, your butcher is a great source for helping you identify the extra lean cuts of meat. Enjoy!
