There are many low-fat versions of chicken and rice, and we particularly like this one because we use the spices tarragon and ginger mixed with white wine to nicely add the needed flavor to the sodium free chicken broth*. We avoid extra fat in this recipe by gently poaching the chicken and vegetables in the broth before baking it in the oven. Both white and wild rice are included and generous portions of sliced fresh mushrooms and chopped celery complete the dish. This is not only a perfect meal for those with acid reflux, but it is also great for family meals and small gatherings. Enjoy!
